Stuffed Pepper - Texas Style
3 oz Cooked Rice
1 green pepper
1/2 cup mushrooms
1/2 cup Spinach leaves, chopped
1 T soy sauce
2 oz cheddar cheese, shredded
Seasonings to taste
Par boil pepper until tender (after removing top and seeds). Stir fry mushrooms, spinach and soy sauce. Add cooked rice. Cool. Add cheddar cheese to rice mixture. Season and stuff pepper. Bake for 20 minutes at 350 degrees.
